Mega TV, Taqueria Arandas and Despicable Me 2

On Monday, I had an amazing time hosting the Despicable Me 2 salsa day at Mega TV with Taqueria Arandas’ Corporate Chef, Marcos Leal. Marcos discussed an amazing yellow salsa recipe to add to your cinco de mayo celebration this weekend! You can catch the full coverage on Mega TV’s show Portada on Thursday night at 10:00 pm. Ingredients:

  • 2 cups of yellow cherry tomatoes
  • 1 cup of fresh pineapple
  • 4 habanero peppers (if they want to make it less spicey they can put less in)
  • 1 tablespoon of fresh minced garlic
  • 1 teaspoon of lime juice
  • Salt and pepper to taste.

Place all ingredients in a blender and blend until smooth.

Despicable Me 2 “Cinco de Minion” salsa recipe

One of my favorite things to do is cook so when my job came up with this amazing “Cinco de Minion” salsa recipe idea, I was extremely excited  The talented chef, Isa Souza, created this amazing “Cinco de Minion” salsa recipe especially for the upcoming release of Despicable Me 2, which is hitting theaters July 3! Why not celebrate Cinco de mayo with a little Minion salsa?

“Cinco de Minion” salsa recipe:

Ingredients:

3 yellow bell peppers (2 chopped and reserve the 3rd to serve)

1 small onion, chopped

2 garlic cloves, diced

2 tablespoons of sour cream

2 teaspoons of salt

3 tablespoons of olive oil

½ teaspoon of ground cumin

½ teaspoon of ground black pepper

Preparation:

Heat a medium-sized pan at high temperature.  Add the olive oil, followed by the garlic and onion, stirring constantly.

Add yellow bell pepper. Reduce the temperature and season with salt, pepper and cumin. Mix well and let it cook for about 15 minutes on low heat. Stir constantly.

When the yellow bell pepper is well cooked, remove from heat.

Add the sour cream. Pour all into a blender and mix. It will form a thick sauce.

Cut the top of the reserved pepper to serve as a container for the salsa . Remove all seeds.  Pour the salsa in the yellow bell pepper and use the top of the pepper to decorate.

The other white meat!

I went grocery shopping last week and picked up pork tenderloins to make for dinner. I love to cook so I figured I’d look up a quick and easy recipe to put these tenderloins to good use! I found this Dijon Marsala Sauce recipe on AllRecipes.com and figured I’d give it a try! It was quick, easy, tasty and my pops loved it. Day filled with cooking

photo (5)Today was filled with cooking! It’s one of my absolute favorite things to do!! I started off the day with turkey sausage and eggs with pancakes! The turkey sausage and eggs is very simple. I add green onions, white onions, tomato, a potato and a little cilantro and cook with the sausage and finally just add the eggs. Simple, quick and super tasty!

For dinner, a simple sopa de estrellas and cubed beef did the trick. You fry the uncooked sopa in oil with the garlic until a little brown then add boiled water and season with sazon de pollo and sazon de tomate. I also add a little garlic salt, onion salt and mixed vegetables and let it boil until it’s ready! For the cubed beef I cut up green onions, white onions, cilantro, garlic and fry it in oil for a few minutes then add the cubed beef with a can of beef broth and let it boil until cooked.
